Kudos to me for cooking an obscene amount of chicken thighs last week. They fed us dinner, lunch, and I even ate them as snacks a few days (easy protein = perfect snack). I'm not sure I want the same thing this week, but I'm going to have to come up with something that functions the same way because that was genius on my part!
Here's what's on the menu for this week:
Spaghetti Squash Bolognese: This is one of my favorite recipes ever. I make it all the time. The page in the cookbook is all splattered with grease. I may need to find a sub for spaghetti squash because it's hard to find this time of year.
Fish Taco Bowls: I'll be using rice instead of quinoa and rockfish will likely be my fish of choice (or whatever we have left in our freezer.
Carnitas: If you've read my blog for any amount of time, you'll know that I love a good pork shoulder recipe (so tasty and so hard to screw up). I'm trying this one this week!
Cherry Chicken: This might be what I make 10lbs of to feed us lunch and snacks for the week. Holy yum!
