no-cook tomato sauce

It's summertime...and the livin' is easy.  Ok, well it's not technically summer yet, but if you live in Alaska it's pretty much summer the minute the snow melts.  

I know a lot of people do a lot of grilling in the summer.  Sometimes because they love it and sometimes because it's too hot to turn on the stove.  I agree that most things are better when cooked on the grill, but it's nice to take a break from having charred bits on your food every now and again.  

Enter...no-cook tomato sauce!  Yes, you could just buy it in a jar, but finding high quality jarred sauce is way more work than throwing together the ingredients for this sauce.  

This is great served over zucchini or carrot noodles, or...over grilled chicken.  

No-Cook Tomato Sauce
serves 4

Ingredients:

1 garlic clove, peeled 
1/2 teaspoon salt
5-10 tomatoes, seeded and chopped 
1 small sweet onion, chopped 
2 tablespoons fresh basil, chopped
1 tablespoon olive oil
1 teaspoon lemon zest (or 1 teaspoon lemon juice)
1/2 teaspoon black pepper

Preparation:

1. Mash garlic with salt on a cutting board using the side of a large knife until it forms a paste.

2. Stir together garlic paste and remaining ingredients in a medium bowl.  Use immediately or refrigerate.

Notes: 

*If you are afraid of raw garlic, use garlic powder instead.  Omit step one and simply mix all ingredients together in a bowl.

*If you are afraid of raw onions, don't use them.  You could substitute onion powder instead.

*The number of tomatoes you should use will depend on size.  If you are using roma tomatoes, use 10, if you are using larger tomatoes, use fewer.  You need about 2 cups of tomatoes.
