easy taco salad
I had a tasty taco salad for lunch today and thought I'd share. It was super easy to make, which is always a plus in my book.
In the mix was
shredded romaine lettuce (~2 cups)
black beans (mashed up with a little salsa, lime juice, chili powder, and garlic powder)
avocado (fake guacamole, mashed 1 avocado with salsa and lime juice, used instead of dressing)
Top lettuce with beans, tomatoes, olives, and avocado...and enjoy!
If you're eating meat you could add cooked chicken or beef that has been seasoned with taco seasoning. Otherwise the beans make it a complete meal. If you need to add carbs you could add some cooked rice or quinoa, and even a sprinkle of cheese!
Unfortunately I have no photo...it was gone before I even thought of taking a picture of it.
The beans I used were leftover from burrito filling I made for lunches last week. I mashed can of black beans and a can of white beans together, added some salsa and lime juice to make the mashing easier, and a tablespoon of chili powder. Then I ate them wrapped up in tortillas with avocado. They were tasty and filling too!
