So I got my hardcover (!!) copy of the second edition of Practical Paleo (if you don't have this book...get it, it's amazing) and this week all of my meals will come out of it.
I'm not going to do any meal prep this weekend, I'm just planning to have lots of leftovers for meals throughout the week. I've linked to recipes where I can, but you can get all of them if you get the book.
BBQ Chicken Casserole (actually from the Fed + Fit cookbook)
Beef & Vegetable Stir Fry
Citrus Fish (I'll make this with Rockfish)
Burgers or meatballs
For veggies I'll be making sauteed greens, salad, and cabbage with onions and apples (also from PP 2nd Edition).
Pretty simple and straightforward this week!
