I'm back from my trip to South Africa and I desperately need to get into the swing of things. I'm officially starting triathlon training this week and continuing an epic travel schedule (a trip every 2-3 weeks until April) along with buying a house and moving. What does that have to do with a menu? Well, it means that I need to get my shit together when it comes to food for the week. 

I'm doing a meal prep challenge with Jenny from Paleo Foodie Kitchen (you can't sign up anymore, sorry!) along with continuing my macros plan. I'm not going to post what I'm doing for meal prep, but I can link to most of the recipes if you are needing inspiration.

Here's what's on the menu for this week:

Skirt Steak Fajitas

Chicken Adobo

Slow Cooker Salsa Verde Pork

Pan Fried Chicken Tenders

Slow Cooker Meatballs

For carbs/sides I'm making rice, broccoli, and a veggie saute (spinach, mushrooms, and some other stuff I have in the fridge). 

I'm prepping and portioning out all of my meals for the whole week this weekend because I'm anticipating that I will be too tired to cook or think about what to eat later this week. I'm jet lagged and haven't been on a regular workout schedule for three weeks, so getting back into a routine this week is going to be painful!
