what we're eating 4/16-4/22

Monday: Enchiladas (we didn't have those last week)

Tuesday: Shrimp Scampi with Spaghetti Squash and salad

Wednesday: Crockpot Chicken Parmesan - This recipe doesn't seem like it would work well, but it does! The only thing I would change is I'd put the mozzarella cheese on 30-60 minutes before it's done cooking, last time there was a bunch of burnt cheese on the bottom of the crockpot.  

Thursday: Panko Crusted Salmon, roasted veggies

Friday: Zucchini Lasagna

Saturday: Dinner out 

Sunday: Leftovers
