what we're eating 12/17 - 12/23

I meant to post this yesterday...I don't even have a good excuse for why that didn't happen!

I did a little more planning than usual this week and added what I plan on eating for breakfast, lunch, and dinner.  We'll see how long this lasts...

D: Sweet and Sour Chicken with Bok Choy

B: Pumpkin Pancakes; Bacon
L: Salad & Leftover Chicken
D: Frittata Muffins

B: Crustless Quiche; Sausage
L: Tuna Salad on lettuce; Hummus & Veggies
D: Macadamia Nut Crusted Salmon (Practical Paleo pg. 314); Green Beans

B: Leftover Frittata Muffins
L: Salad with leftover salmon
D: Lemon & Artichoke Chicken (Practical Paleo pg. 260); Broco-Cauli Chowder (shhh...don't tell John...he thinks he hates cauliflower)

B: Crustless Quiche; Sausage
L: Leftover Chicken
D: Stuffed Bell Peppers (Practical Paleo pg. 300); Salad

D: Salmon Chowder (nope...still haven't eaten this even though it's been on the menu for two weeks)

I made the crustless quiche (from Practical Paleo) and the breakfast sausage today...it took less than an hour all said and done (including cooking time and clean up)...and now I don't have to worry about breakfast on work days this week!
