All of the new things I posted to eat last week were delicious! They will definitely be worked into my meal plan on a regular basis. The Roasted Veggie Enchiladas were my favorite (and John's too)! Here's what's for dinner this week: Monday: Pesto Chicken Stuffed Shells Tuesday: Pizza (we didn't actually have this last week) Wednesday: Spinach, Bean, and Bacon Hash (roast potatoes, thaw frozen spinach, cook bacon, add spinach, potatoes, and a dash of hot sauce, cook until warmed and mixed. Top with fried eggs (and cheese if you love cheese as much as I do!) Thursday: Thanksgiving Friday: Grilled Cheese and Tomato Soup Saturday Balsamic Chicken Pasta Sunday: Thanksgiving #2 Hopefully we will eat leftovers next week on Monday because then on Tuesday we are headed to Maui!
