what to do when you want dessert, but have none...

You make something up of course!

I had a hankering for something sweet while I was watching the Olympics this evening (does anyone else have a hard time dealing with the void of Olympics viewing that occurs between 3pm and 7pm Alaska time?  Worst part of my day).

We don't really have dessert-like food in the house, and I was not about to start baking anything because it's 71 degrees in the house (the heat is off, and I don't recall it being particularly warm outside, so I'm not sure what's going on...I will try not to complain because at least it's not 50 degrees inside when it's frigid outside - see this post for some perspective).

Here's my delicious yogurt dessert concoction...

~3/4 cup plain Greek yogurt
3-5 drops liquid stevia (or honey, or maple syrup)
1/4 tsp cinnamon
1/4 cup almonds, chopped
1 square dark chocolate, chopped
fruit or jam (I used rhubarb strawberry sauce that John's mom made, a tablespoon or two of jam would have the same effect, sliced fruit would work too)

Combine and enjoy!

Next time I think I am going to throw the yogurt part in the freezer for a bit before topping it with the rhubarb strawberry sauce.

It was a tasty (and mostly healthy) dessert (John liked it too, and Kiva thought she might like to try it, but she was disappointed because I did not let her)!!
