Last night we had this Easy Tandoori Chicken for dinner. It was amazing. Make it now.
I didn't have the spice blend mentioned in the recipe so I just googled tandoori spice blends and made my own. I used equal parts ground ginger, cumin, turmeric, salt, coriander, paprika, and cayenne pepper.
It was easy and probably the tastiest thing I've eaten in a long time. I ended up finishing it with the broiler to make it crispy on the outside. I also had to use crumpled tinfoil to cook it on because I apparently don't have a wire rack.
It was the perfect dinner with some roast sweet potato wedges and sauteed kale. Yum!
