Over the last few days I've really been trying to clean up my eating. I eat pretty well to being with, but I have noticed over the last couple of weeks that I've been choosing convenience foods over real food. My biggest problem right now is cereal. It makes a wonderful mid-afternoon snack, but it doesn't exactly fit into my food philosophies.
Never fear! I found a solution. I made my own "granola" that is almost as good as the kind out of the box and it's much better for me! No added sugar and no grains! (I have made an unfortunate discovery that oats may be on my do not eat list...)
Squeaky Clean Granola
2 cups chopped dates
2 cups chopped almonds
2 cups chopped walnuts
1 cup pine nuts
1 cup raisins or dried cranberries
1 cup unsweetened shredded coconut
1 cup ground flaxseed
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
Mix all ingredients in a bowl until spices are well distributed. Enjoy! Store in an airtight container
I chopped my own almonds, walnuts, and dates, but you could buy them already chopped. I enjoyed mine with some almond milk...it was a very worthy substitution for my afternoon bowl of cereal.
