As I've said before, I love all things pumpkin. I know that not everyone feels the same, but in the interest of not posting a new pumpkin recipe every day, I thought I'd scour the internet for the best of the best pumpkin recipes.
Not only does pumpkin boast impressive nutrient stats, but it also tastes great and can be used in a huge variety of dishes. One cup of cooked pumpkin has 245% of the recommended daily amount of vitamin A (as vitamin A precursors like beta-carotene, for more on why this isn't a substitute for vitamin A, check out this post); 20% of our daily value of vitamin C; 15% of our daily value of potassium; about 10% of our daily value of vitamin E, vitamin B2, copper, and manganese; and at least 5% of our daily value of vitamins B1, B3 B5, B6, and B9 (folate), iron, magnesium, and phosphorus; plus nearly 3 grams of fiber! That's a pretty big nutritional punch for 49 calories.
These recipes are not all sweets and treats, so if you don't love pumpkin pie, you might find a savory pumpkin dish on this list that you do like (or not, no judgement here). Not all of these recipes are considered paleo, but they are all gluten-free.
