Protein Pancakes {macro friendly}

Macro Friendly Protein Pancakes - high protein, low-carb, grain-free, and gluten-free. These pancakes are so tasty you'll hardly even know that they're good for you. They also won't blow your whole carb budget for the day! Click for the recipe. 

Since I've been following a macros-based meal plan and not doing a lot of working out, I've been missing out on carbs. I woke up one weekend really wanting pancakes, but not wanting to completely blow my entire allotment of macros for the day. That meant getting creative with my pancake making skills. 

Most "protein pancake" recipes I could find called for a whole banana, which is a lot of carbs. Or cream cheese, which is fine if you eat dairy. I knew that egg whites and protein powder (or collagen peptides) alone were not going to make a thick enough batter to create anything resembling a normal pancake. So I put my culinary thinking cap on and this is what I came up with...

Protein Pancakes {macro friendly}

Makes 1 serving

1 cup egg whites
1 tablespoon almond milk
1 scoop collagen peptides or protein powder of choice
2 tablespoons coconut flour
1/2 teaspoon baking soda
1 teaspoon lemon juice
1 teaspoon cinnamon
coconut oil for cooking

1. Blend egg whites, almond milk, and collagen peptides/protein powder in the blender until smooth. Add coconut flour and blend again until smooth. 

2. Pour batter into a bowl, add baking soda, lemon juice, and cinnamon and stir to combine.

3. Heat coconut oil in a skillet over medium-high heat. Add batter to hot pan 1/4 cup at a time. Cook pancakes on one side until bubbles form and pop and the pancake is dry around the edges. 

4. Flip carefully and cook another few minutes until pancakes are done through. Serve with toppings of choice (maple syrup, honey, jam).

 
 

If you need more protein, you could make these into the "bread" for a breakfast sandwich (bacon and avocado anyone?), and if you're short on time, make these ahead of time and pop them in the freezer. I find that pancakes reheat really well when you reheat them in the toaster. They don't get soggy like they do when you reheat them in the microwave.
