I realize that it's a very Alaskan problem to have, but I have a freezer full of fish (salmon and halibut) and am always looking for ways to cook it to keep things interesting. I'm definitely not complaining, and come January I'll be very glad to have all that fish!
Last Friday night's dinner was a solid winner. Pan seared salmon and paleo ranch - plus sauteed mushrooms and zucchini and roasted potatoes. I had other plans for the salmon, but I decided to go with something easier...it was Friday night after all!
Pan Seared Salmon
1 salmon fillet salt & pepper to taste 1 tbsp olive oil
Heat oven to 425°F. Sprinkle the salmon fillet with salt and pepper. Heat the olive oil in an oven safe pan over medium high heat.
Place salmon flesh side down (skin side up) in the pan and cook for about 5 minutes until a crust begins to form. Then transfer the pan to the oven and cook until cooked through (10-15 minutes).
Paleo Ranch Dressing
1 cup homemade mayo 1 tsp canned coconut milk 1 tsp apple cider vinegar 1 tsp dried parsley 1/2 tsp garlic powder 1/2 tsp ground pepper 1/4 tsp paprika
Mix ingredients together and enjoy!
This whole meal came together in under 30 minutes, but tasted like I spent hours slaving over a hot stove. Fortunately that's not my style, I prefer maximum taste bud bang for a very minimum effort. I'll post my roast potato recipe and the recipe for the veggies soon!
