Mustard Lime Chicken Thighs

If you've been around here for any length of time, you know that I value simplicity when it comes to recipes. I love tasty food, but I don't love spending a lot of time making it, nor do I love needing 5,000 ingredients. When I'm searching recipes to make for dinner, I almost always skip over things that have ingredients with more than 10 ingredients (there are exceptions to this, of course). I always try to keep that in mind when developing recipes of my own. It's helpful that I find writing ingredient lists rather unpleasant as well...

These chicken thighs are fast, easy, and delicious. I think I say that about almost every recipe I create, but I suppose that just shows consistency, right? If you aren't a fan of chicken thighs, this would also work just as well with chicken breasts. Boneless, skinless, bone in, skin on, it doesn't matter, go with what you prefer or what is readily available at the store!

Mustard Lime Chicken Thighs

Paleo // Grain-free // Gluten-free // Dairy-free

Yield: 2-3 servings
Total time: 2.5 hours (varies depending on marinating time, see recipe)

1 lb chicken thighs
1/2 cup dijon mustard
1/4 cup coconut aminos
2 tablespoons lime juice
1/2 teaspoon sea salt

Mix mustard, coconut aminos, lime juice, and salt together in a bowl. Add chicken thighs and mix to coat well. Allow to marinate 2-24 hours.

Move top oven rack as high as it will go and preheat broiler. Place chicken on a broiler pan and place in oven. Broil for 3-7 minutes each side (time will depend on the size of your chicken thighs) until cooked through and starting to brown around the edges. Remove from oven and serve with cauli rice or roasted vegetables. 

If you are looking for ways to cook less and eat at home more, you could double this recipe and freeze half of the cooked chicken for a night when you really need something fast and easy. The other option (one that I've used many times) is to freeze the chicken in the marinade. If you do this, make sure that the marinade is more on the liquid side as far as consistency is concerned. Simply place all of the ingredients into a ziplock back and freeze. When you are ready to cook, pull the bag out of the freezer and allow to defrost. Follow cooking directions once chicken is fully defrosted.
