Yesterday, I needed something quick and easy to make for dinner with the ingredients I had on hand (isn't that pretty much the criteria for dinner every night?).
It started with onions, and then grew to onions and sun dried tomatoes, then I remembered I had some mushrooms that I needed to use. After all that made it in the pan, I decided it needed something else, so I chopped up some spinach and tossed that in the mix too. A splash of white wine and balsamic…and viola, super easy and tasty dinner!
Mushroom, Sun Dried Tomato, and Onion Saute
1 onion chopped
8 oz mushrooms, sliced
1/4 cup sun dried tomatoes
2 cups chopped fresh spinach
1 tbsp balsamic vinegar
2 tbsp white wine
2 tbsp olive oil
s&p to taste
Rice or pasta
Heat olive oil, add onion and cook until translucent. Add sun dried tomatoes, cook for a few minutes. Add mushrooms, cook until soft. Add wine and vinegar, then add spinach and cook until wilted.
Serve over grain of choice.
This would also be good mixed with spaghetti squash.
