What We're Eating: Week of Sept. 21

What-We're-Eating-sept-21 I have definitely been struggling with inspiration in the kitchen lately. Usually I'm at least inspired by hunger when dinner time rolls around, but that has not been the case lately. I have also found that planning veggies to go with meals doesn't always work, mostly because I inevitably end up being too lazy to roast the veggies on whatever night I have planned them. So when it comes to side dishes, I generally just wing it, unless there's something specific I want to go with the meal.

We usually have a variety of veggies in the fridge and various things that can be used to make salad in a pinch. While I absolutely love food, sometimes I feel like life would be so much easier if we didn't have to feed ourselves!

One other thing that I have done to make feeding myself easier is prepare breakfast for the week ahead of time. It's usually egg muffins because they are easy. Then all I have to do for breakfast is heat something up!

Here's what's on our menu this week:

Monday: Chicken "pasta" (similar to this recipe but with a different sauce that is in the Make it Paleo 2 cookbook)

Tuesday: Garbage Stir Fry

Wednesday: Crockpot pork with mashed cauliflower

Thursday: Greek meatballs

Friday: Pizza soup

Saturday: Ranch chicken

Sunday: Leftovers
