If you rely on recipes for cooking...you're probably going to be disappointed by this menu. Sorry! I'm trying something new. The "hot plate" concept by Melissa Joulwan. Basically you cook up a bunch of meat and veggies and then you make dinner out of those throughout the week.
I meant to do a big cookup this weekend, but I went and played outside instead. I did manage to cook a few things to ease the dinner making burden throughout the week.
Here's what I have going this week:
Monday: Hot plate (sausage, peppers, tomato, carrots, zucchini, and spaghetti squash)
Tuesday: Hot plate (chicken, broccoli, carrots)
Wednesday: Arctic Valley Board meeting (dinner out)
Thursday: SB&J Burgers (I'm making them as meatballs and making the sauce out of cranberries because that's what I have)
Friday: Princess Holiday Party (dinner out)
Saturday: Salmon + broccoli + roast SP
Sunday: Pad Thai
