I'm probably heading out of town for the long weekend, so I had to hurry up and get our meal plan for next week done. If I go, I won't be home until Monday evening and there's nothing worse than trying to scramble to get dinner together for a busy week on short notice. Sooooo...I got it done on Friday. That might be the earliest I have ever planned meals for the next week.
Here's what's happening next week in our kitchen:
Monday: Rotisserie Chicken and mashed cauli
Tuesday: Sun-dried tomato meatballs and antipasto salad
Wednesday: Crockpot Curried Beef Stew (from Stupid Easy Paleo)
Thursday: Mediterranean Chicken and roast broccoli
Friday: Chicken Pot Pie (to use the leftover chicken from Monday)
I also got the weekly trip to Costco taken care of on Friday too. Really, this is unprecedented. I guess that's the power of motivation. I definitely don't want to starve next week and I would much rather sleep than worry about making breakfast, packing lunches, or cooking dinner! I suppose that it also helps, or is made more urgent by the fact that I've been starving all week. Not starving in the sense of not having enough food, but starving in the sense that I've eaten a lot this week. I guess that's what happens when you are training for a triathlon. #triathlontrainingproblems
