Today was the first official day of school for me! So far, the only thing that has changed is that I replaced my afternoon nap with some academic reading.
This morning was super foggy, but Kiva and I still went out for our morning run. It cleared up while we were out, and we had to change our route because we came face to face with some moose! You can't see it in the photo, but there's a moose staring at me through the trees...
This week I tried something new with our menu. Since JRW has been getting home around the same time or after me on the days that I work, and I now have the added time constraint of school, I decided to cook as many dinners for the week as I could today.
I made bacon, breakfast quiche, roast chicken, stuffed peppers, cooked salmon for salmon cakes, cut up lettuce for salad, and sauteed some veggies for side dishes. The only thing I have left to do is cook our dinner for tonight and cut up some veggies for later in the week. I'll be talking more about what I did on my other blog tomorrow.
After the foggy start to the day, it turned out to be another beautiful day (we are having a super warm and sunny May)! After all the work I did, I took a break and did some knitting on my front porch. It actually got too warm for me and I had to head inside!
