Despite the fact that I have been increasingly lazy when it comes to planning and executing meals, I have managed to eat some delicious things so far this week.
Smoked salmon and collard green omelette
Smoked salmon, sun dried tomato, and caper salad.
And turkey burgers with kale cauli rice and red cabbage slaw.
What this does not show is that the turkey sat in the fridge for three days while we ate leftovers and ate out because no one felt like making the burgers. Burgers are not hard, but when you are tired or not really hungry, they are the hardest.
